Hand made in the same style of over a 100 years, in the village of San Luis del Río, this artisanal spirit begins with Espadín agave, cultivated for over five years in the highlands of Oaxaca and only harvested when mature. The agave is slow-roasted in wood-fired earthen pits, naturally fermented with wild yeast in pinewood tanks, and double-distilled in copper pot stills—resulting in a Mezcal that is complex in taste, combining the sweetness of ripe Espadin with the green and vegetal flavors derived from the terrier of the town of San Luis del Rio, 3000 feet above sea level and right next to Rio Grande; the water from which is used distil it, and the smoky flavor associated with Mezcal.
